Ingredients for gluten free cinnamon rolls

To prepare some delicious gluten-free cinnamon rolls you will need the following:

  • 1 cup warm whole milk
  • 3 cups of gluten-free flour
  • 3 tablespoons of brown sugar
  • ¼ teaspoon kosher salt
  • 1 packet of active dry yeast
  • 1 teaspoon vanilla extract
  • 2 teaspoons of baking powder
  • 1 large egg at room temperature
  • ½ cup unsalted butter, melted
  • 1 egg yolk at room temperature

Ingredients for the stuffing

  • ¼ cup ground cinnamon
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract

Ingredients for the glaze

  • 4 ounces cream cheese
  • 2 cups of powdered sugar
  • 1 tablespoon heavy cream
  • ⅛ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, softened

Preparation

  • You have to start by placing the milk in a large bowl.
  • Add the three tablespoons of brown sugar and yeast and let it rest until bubbles appear, about five minutes.
  • On the other hand, beat the egg, the yolk, the melted butter and the vanilla, adding it later to the mixture, with yeast and integrating it, little by little.
  • In another bowl, mix the flour, baking powder and salt.
  • The wet and dry parts are combined and everything is combined with the help of a kitchen spatula. The result will be thick and no more flour should be added.
  • Now let’s go with the filling. The butter is mixed with the cinnamon, sugar, vanilla and salt. All this is moved with a spatula until a smooth and homogeneous consistency is achieved.
  • The time has come to place parchment paper on a baking tray and sprinkle flour on top. The dough is placed there and spread with the help of the hands, forming a rectangle.
  • Once this step is achieved, the filling is incorporated on the surface and spread well.
  • It only remains to roll up using the parchment paper and put in the freezer for 20 minutes to harden.

Once this step has been passed, the trunk is cut into 12 rolls and placed on a greased mold. Cover with plastic wrap and leave to rest for an hour so that the dough softens. After the time has elapsed, they are baked at 180 degrees Celsius for about 30 minutes, until they are golden and puffed.

Frosting (by choice)

  • For the frosting, mix the butter with the cream cheese with the help of a hand mixer.
  • When both ingredients are integrated, add the sugar, heavy cream, vanilla and salt, stirring everything again.
  • It only remains to spread the rolls with this preparation and they can be consumed.
